Wildflower Honeycomb Candy

Butter
2/3 cup sugar
1/4 cup wildflower honey
1/4 cup water
1 tablespoon baking soda

Line a baking sheet with foil. Lightly coat foil with butter. Combine sugar, wildflower honey and water in a medium to large heavy saucepan. Heat over medium-high, stirring constantly until sugar dissolves. Continue cooking undisturbed until a candy thermometer reads 300°F. Remove from heat and vigorously stir in baking soda. The mixture will grow substantially in size. Continue stirring to ensure all baking soda is dissolved. Quickly pour onto prepared baking sheet. Do not spread. Allow to cool for 1 hour before breaking into chunks. Store in an airtight container with waxed paper between layers.
