Red Velvet Cake

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 tablespoon baking soda
1 teaspoon salt
1 teaspoon cocoa
2 eggs
1 1/2 cups corn oil
1 teaspoon baking powder
1 cup buttermilk
1 teaspoon vinegar
1 teaspoon vanilla
1 ounce red food coloring
Sprinkles or colored sugar, to garnish

Preheat oven to 350°F. Combine flour, sugar, baking soda, salt and cocoa in a mixing bowl. Slowly beat in eggs and oil. Add remaining ingredients, mixing well. Bake in a greased and lined pan for 15 to 20 minutes or until toothpick inserted in the center comes out clean. Let cool on a wire rack. Place a layer of cake in each jar. Top with a layer of cream cheese frosting. Repeat with two more layers. Garnish with sprinkles or colored sugar.

For cream cheese frosting:

1 stick butter
2 (8-ounce) packages cream cheese
4 cups powdered sugar
1 tablespoon vanilla

Beat together butter and cream cheese. Slowly add powdered sugar, scraping sides frequently. Add vanilla, mixing well.
