Easiest-Ever Steak Tacos

1 (7-ounce) can chipotle chiles in adobo sauce
1 pound flank steak, trimmed of fat and silver skin
3 tablespoons olive oil, divided
2 medium red onions, sliced 1/4-inch thick
1/4 cup chopped fresh cilantro
Corn or flour tortillas
Toppings, as desired

Turn oven on lowest setting. Place chipotle chiles and adobo sauce in a blender; process until smooth. Spread chipotle paste on steak. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add onions and cook, stirring frequently, for about 5 minutes. Onions should be cooked, but still slightly crunchy. Remove onions, leaving oil in pan. Add remaining tablespoon of olive oil to pan over medium-high heat. Add steak; cook for about 5 minutes on each side. Remove and let rest in the oven on low setting for 5 to 10 minutes. Slice steak against the grain into very thin slices. Toss meat with onions and cilantro. Fill warmed tortillas with steak and toppings.
