Cranberry Apple Chutney Over Brie

1 1/2 cups fresh cranberries
5 tablespoons sugar
2 Granny Smith apples, divided
Zest of 1 orange
Juice of 1 orange
Splash white wine, sauvignon blanc recommended (optional)
1 (8-ounce) round brie
Crackers, to serve

Place cranberries in a medium saucepan over medium-high heat. Cook, stirring frequently, for about 3 to 4 minutes, or until cranberries start to pop. Reduce heat to medium. Add sugar, 1 diced apple, zest and juice, stirring until combined. Simmer over medium-low heat for 15 to 20 minutes. Increase heat. Add wine, stirring until blended. Reduce heat, simmering for 5 to 10 minutes. Remove from heat.

Preheat oven to 350°F. Remove top rind of brie using a large, sharp knife. Place brie in a small, oven-proof platter. Bake for 5 minutes, or until slightly softened. Remove from oven. Top with chutney, garnish with apple slices and serve with crackers. Use leftovers as a condiment for turkey sandwiches.
