Chocolate Dipping Sauce

4 ounces good-quality dark chocolate or 1/2 cup dark chocolate chips
1-ounce milk chocolate or 2 tablespoons chocolate chips
1 tablespoon corn syrup
2/3 cup heavy cream
Pecan tarts or madeleines, to serve

Create a double boiler by filling a medium saucepan with water, and topping the pan with a large saucepan sitting at least 1 inch above the water. Heat pan over medium-high heat. When water is simmering, lower heat and add all ingredients. Once the chocolate melts, remove the pan from the heat and set it aside in a warm place. Serve with pecan tarts or madeleines.
